Dominik Held – Rheinhessen, Germany
Dominik Held belongs to a new generation of German growers proving that Rheinhessen is capable of producing some of the country's most exciting low-intervention wines. Working organically and with a light touch in the cellar, he focuses on expressing limestone-rich vineyards rather than following fashions.
This Chardonnay comes from a cool, north-west-facing slope planted on limestone, marl and loess. The grapes are pressed directly and fermented with indigenous yeasts before spending around eleven months on the lees in used oak barrels. Nothing is added to shape the wine beyond a minimal dose of sulphur before bottling.
The result is a Chardonnay that favours tension over richness. Citrus peel, yellow apple and ripe pear are layered with toasted almond, subtle lees character and a chalky mineral finish that lingers long after each sip.
