From volcanic soils on the Ritten above Bolzano, Tonsur blends mostly Müller-Thurgau with Chardonnay, Pinot Blanc, and Sylvaner into a textured, alpine white. Fermented partly on skins and aged a year on lees in large oak, it shows notes of chamomile, stone fruit, and cool mineral tension. Compact and savory, with a firm structure and long aging potential.
